Principal Bartender


Chad Hauge, originally from Iowa, started his cocktail career in New York City, where he worked at a Mexican tequila bar while immersed in the city's theater scene.

Chad then moved on to Jean-Georges Vongerichten's acclaimed restaurants, learning about bartending at both JoJo and Matsugen. He made a move back to the midwest and joined the team at Longman & Eagle in 2010, shortly after it opened.

During a brief haitus from Longman, Chad ran the bar program at Chicago's Mott Street, where he focused on using only top quality ingredients. Chad returned to his roots at L&E as principal bartender in early 2014, where he brings a dedication to creativity and craft, as seen in his ever-rotating seasonal menus. Chad has a commitment to using fresh ingredients in interesting and unconventional ways that perfectly complement and enhance Chef Matt Kerney's menus.
